Grupo Nueva Pescanova has begun the validation phase of the first prototypes of a new AI-based tool designed to optimise surimi production, due to be implemented at the company’s Chapela factory during this month.
This is part of the PremIA project, an R&D initiative to develop a new AI-based predictive system, the objective of which is to improve efficiency and quality in the production of fish, seafood and derived products.
The goal of PremIA is to design and implement a tool capable of analysing large volumes of data, detecting patterns, and generating statistical models that allow for forecasting future production behaviour. Its application will enable users to anticipate timelines, yields, and needs, facilitating strategic decision-making based on reliable data.
The project comprises two lines of research. One is the application of artificial intelligence in surimi production to maximise process efficiency and optimise nutritional value, texture, and flavor of the final product. The other is the development of advanced AI algorithms to predict the shelf life of cooked prawns in order to improve quality control, reduce food waste, and enhance product safety.
The research line in surimi production is currently the most advanced. In this instance, the AI tool is able to predict the optimal combination of raw materials to obtain the best factory yields, optimise costs, and simultaneously guarantee compliance with finished product standards.
